Question about an evaporator?

I'm planning to build a maple syurp evaporator and am wondering what gauge stainless I should use. I'm planning to have it sitting on top a steel plate with wood fire for heat source. I'd like to avoid warping. Size 3x4x1 ft. With support baffles inside it.
